### Classic Baked Macaroni and Cheese

– 2 cups shredded Gruyère cheese (divided)

– 1 cup panko bread crumbs
– 2 tablespoons melted butter
– 1/4 cup grated Parmesan cheese

– Slowly add 3 cups of the cheddar cheese and 1 1/2 cups of the Gruyère cheese, a handful at a time, stirring until the cheese is completely melted and the sauce is smooth.

4. **Combine Pasta and Sauce**: Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.

5. **Assemble the Dish**:
– Pour half of the macaroni and cheese into the prepared baking dish.
– Sprinkle with 1 cup of the remaining cheddar cheese and 1/2 cup of the remaining Gruyère cheese.
– Add the rest of the macaroni and cheese on top.
– Sprinkle with the remaining cheddar and Gruyère cheeses.

– In a small bowl, combine the panko bread crumbs, melted butter, Parmesan cheese, and smoked paprika (if using).
