Pulled Chicken Burger Recipe

#### Ingredients:

**For the Pulled Chicken:**
– 2 lbs (900 g) boneless, skinless chicken breasts or thighs
– 1 cup barbecue sauce (store-bought or homemade)
– 1/2 cup chicken broth
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1 tbsp olive oil
– 1 tbsp apple cider vinegar
– 1 tbsp brown sugar
– 1 tsp smoked paprika
– 1 tsp ground cumin
– 1/2 tsp salt
– 1/2 tsp black pepper

**For the Coleslaw:**
– 2 cups shredded cabbage
– 1 carrot, shredded
– 1/4 cup mayonnaise
– 1 tbsp apple cider vinegar
– 1 tsp sugar
– Salt and pepper to taste

**For Assembling the Burgers:**
– 4-6 burger buns
– Pickle slices (optional)
– Additional barbecue sauce (optional)

#### Instructions:

1. **Prepare the Pulled Chicken:**
– In a large pot or Dutch oven, heat the olive oil over medium heat.
– Add the chopped onion and minced garlic, sautéing until they are soft and translucent.
– Add the chicken breasts or thighs, chicken broth, barbecue sauce, apple cider vinegar, brown sugar, smoked paprika, ground cumin, salt, and black pepper to the pot.
– Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the chicken is tender and easily shredded.

2. **Shred the Chicken:**
– Remove the chicken from the pot and shred it using two forks.
– Return the shredded chicken to the pot and stir it into the sauce, allowing it to absorb the flavors. Keep warm on low heat.

3. **Prepare the Coleslaw:**
– In a large bowl, combine the shredded cabbage and carrot.
– In a small bowl, mix the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
– Pour the dressing over the cabbage and carrot, tossing to combine. Adjust the seasoning to taste.

4. **Assemble the Burgers:**
– Toast the burger buns lightly, if desired.
– Place a generous portion of pulled chicken on the bottom half of each bun.
– Top with coleslaw and pickle slices (if using).
– Add an extra drizzle of barbecue sauce if desired.
– Place the top half of the bun on top and serve immediately.

Tips:
– For an added layer of flavor, you can grill the chicken before simmering it in the sauce.
– Serve with sweet potato fries or a side salad for a complete meal.
– If you have a slow cooker, you can cook the chicken on low for 6-8 hours or on high for 3-4 hours for a hands-off approach.
